KITCHEN DRAWER

WHAT IT SHOULD GOHTAIN ESSENTIALS AND EXTRAS , If the kitchen is the heart of the house the kitchen drawer is; the soul of the kitchen. Without it kitchen life would stop, arid yet so contrarily is the cosmos arranged that it is often among the most neglected pf all the objects in a good kitchen. For one thing it frequently sticks. It has to he tugged out and hanged back again. A kitchen drawer which works at a touch is' a rarity, and it usually belongs to a better table than those designated “kitchen.” _ Much may, however, be done sometimes by planing down" one side, or, still more simply, by a lavish use of soap. The kitchen drawer should contain all the ultimate necessities. Geographically well within reach of the stove, it should have a lavish supply of forks which do not matter. These should be supplemented by spoons, big and little, of the same social status, so that if one be lost in the potatoes there is yet another foxtaking the meat out of the pan. Wooden .spoons of various calibre may be kept in a kitchen'drawer, and, lest confusion ensue and if the drawer be large enough, it is a good plan to have a shallow wire knife dish which separates tlxe different implements and makes them easily available. The subtleties of a kitchen drawer include potato peelers which skin the potato instead of the hand, a tin opener on a generous scale which will attack nothing but tins, a corkscrew preferably on the leverage principle, not forgetting a cap lifter for those bottles which ocshew corks. Skewers of various kinds should haunt the drawer, perhaps a few clothes pixxs, something pointed which will open milk bottles without causing a milk fountain. Odd pieces of string are at times invaluable. So is a bradawl. The wellregulated mind will lyiv© a place for all these things, which is not the kitchen drawer. For the more casual there is nothing like a central depot where all the utilities can he found together.
