J. R. BROWN'S HYGIENIC BREAD With the introduction of machinery the business of bread making has advanced rapidly, until, in the case of the most enterprising bakers, the methods employed are scientifically and hygienically perfect. As an instance of all that is best in our daily bread, one has but to mention the pure, health-giving product that is being baked on the premises of Mr J. H. Brown, near Forbnry Corner. When ho first started business Mr Brown was so successful that he soon found it necessary to meet the growing patronage by means of extensions to his buildings and plant. A few years ago appliances of the latest design were installed. Most of them arc electrically driven, and all of them are so clean and well cared for that the daily batch is the last word in purity. The baking plant in Mr Brown’s up-to-date premises includes electric ovens which were locally made and which are claimed to be the most efficient type in the southern hemisphere—a fact which, incidentally, speaks well for the progress made with manufacturing in Dunedin. A spacious and well ventilated store room for flour is also attached to the establishment, and the various processes involved in converting. this flour into the finished article are carried out with the utmost observance' of' hygienic principles. First' Of all the flour is taken from the bags to the. hopper, from which it is carried by an elevator to the sifter. After being sifted it is dropped down through a chute into mixing pans—huge, round, revolving receptacles which are made of tinned steel. In turn the pans are wheeled under the arras of an elec-trically-driven mixer—a truly wonderful device with huge tireless arms which do their work thoroughlv. The remaining processes, including the all-important one of baking, are carried out with equal efficiency, the result being hundreds and hundreds of wholesome, appetising loaves, which eventually find their way into homes in all parts of the city.
