Chopped sour apples, 1 cup. Chopped raisins, 1 cup. Ripe tomatoes, 3 large. Preserved ginger, loz. Light brown sugar, 2i cups. Onion, i (small). Salt, $ tablespoonful. Strong vinegar, 1 cup. Cayenne pepper, 1-16 teaspoonful. ful. White mustard seed, loz. Peel and quarter the tomatoes. Combine all ingredients, and cook gently about three hours. Watch carefully as mixture thickens, since it will burn easily. Seal in jars.
