EGG ECONOMIES
With all housekeeping expenses creeping higher every day, many economies must be devised by the housewife. Eggs must be used sparingly, though that does not mean that recipes giving
eggs should be omitted entirely from the menu. One egg will do the work of two if a pinch of bicarbonate of soda is added to it when beaten. Another method is to beat up the egg and when it is frothy add a tablespoonful of warm water. This idea is good for cakes, batters, and scrambles.
