MAKING A SUCCESSFUL SPONGE CAKE
The secret of a successful sponge cake really lies in the light hands of the cook. "The hands should be kept cool and a wooden spoon should be used for beating. The eggs should be added to the creamed butter and sugar before the flour., and the mixture should be beaten in the same direction all the time. Sponge cakes tend to stick to the tin if they are turned out too
