SWEETMAKER
Turkish Delight.—Two pounds castor sugar, 2i gills water, juice 2 oranges, 2oz gelatine, juice 2 lemons, icing sugar, cornflour. Method: Put sugar, gelatine, and water into a large saucepan, being careful to see that it is perfectly clean. Dissolve slowly, stirring all the time till it comes to the boil, then boil steadily for 25 minutes. Add the juice of the fruit to mixture. Loave saucepan on one side of st6ve for 10 minutea, then pour into wetted tins. Then put asido to set; it is best to leave for 7 hours, if possible. Finally turn out, cut in squares, and roll in icing sugar and cornflour. , , ■ "LADY IN BLACK" (15). Hataitai.
