Davis oh the effect on the British market of the shipments of small quantities of modified cheese. These shipments arise by reason of the fact that small quantities of standardised cheese are found on being tested to contain a lower percentage of butter-fat, in-the moisture-free'substance than is permitted by the regulations.. "We feel certain," stated Mr. lorns, "that factory managers are doing their utmost to avoid the manufacture of modified cheese, but it probably has to be admitted that to entirely eliminate its manufacture is almost impossible. The question arises, what is to be done with the cheese when the percentage of fat is such that it must be branded 'modified'? Our London manager urges its retention in New Zealand, but is doubtful if this is going to be possible. Mr. Davis is emphatically. of the opinion that even small quantities .of modified will arouse suspicion of the 'standardised' cheese/which is at pre.sent being accepted as quite satisfactory by the market. In the meantime all that can possibly be done is to urge upon dairy companies to take even greater care in the manufacture of standardised' with a view to' reducing to a minimum tine percentage of 'modified/ and further to ask all cheese companies to do their utmost to dispose of this type of cheese on the local market."
