FROZEN MEAT TRADE
The Meat Trade Journal of 16th June, reports that "the imported meats as a whole last week did not reach good average quality mark. The consumers' demand for meat is readily reflected at Smithfield by the'retail butcher, and that demand is mostly for the best cuts —and small at that. Consequently coarse cuts find a difficult market, and if not actually wasted are sold at ridiculously low prices. Someone has to pay, and this is instanced by the fact that on Friday shoulders and legs cut from New Zealand lamb fetched up tb Is 8d per 1b wholesale. So it follows that until a more general demand for all parts of a carcase prevails, !,he ratio between wholesalo values .it Smithfiold and the price paid by consumers for thp choice cuts they demand from the: retailers must continue to show a wide margin."
