FRUIT CANNING.

Mr. W. Jaques, fruit canning and preserving expert, has just received a lonsignment of California fruits of the 1907 pack, and fruits and vegetables of ihe same pack from Great Britain and lha Continent. Speaking to a repreicntative of The Po&t this morning, Mr. laques explained that the samples were For demonstration and comparison. Later >n he will give demonstrations of canfling varieties, packing, and general getop of foreign canned goods, and of the New Zealand product to merchants in \he chief centres of the Dominion. A.mong the samples are some Spanish goods, which Mr. Jaques said were exjellent. The Continent, he added, had been making great strides in canning of late years, but the industry there was like that of New Zealand, still in its infiiiicy. New Zealand could produce banned fruits, equal to any put up in flalifomia, so far as quality was con* terned, and the price would compare Viost favourably with the American arlicle. As time went on, tho industry would greatly improve, for the old usey?ss varieties of fruifc which had been slanted in the past would be replaced Sy fruits eminently suitable for canning purposes,
