FROZEN MEAT TRADE.

TO THX IDITOB. Sib— Your Featherston correspondent on this snbjoot imagines I am offended with him. Far from it; but I will admit being very muoh surprised at the line be has taken up. He seems to look npon me as an enemy, instead of whioh I am only trying to point ont mistakes that have existed, and caa be rectified. In his second letter of the N 18th, instead of admitting he was wrong, he baa left argument and taken to quibble. In his first latter ht iptaka of a lots or blood from

the foreqnarter ; in the Becond he states it is only a small amount which dries on the carcase. In none of my lettera have I spoken of the outside of a oaroase, bnt admitting that I have, if blood was left on the outside of a beast it is a dear proof of negleot of dressing, as it should have been washed off, and only brings to light another mistake iof shippers in not superintending the I slaughtering of stook before freezing. If Mr. Montague Nelßon oonfine3 himself to tbe analysis of what iB absorbed from the atmosphere, I am at a loss to see of what practical nee it is to the frozen meat trade. If, on the other hand, a bind(juarter of mntton was analysed here and the other at Home, after going through the frozen state, we might learn something. With regard to your correspondent's statement of ■ blood being mixed with other liquid from the forequarter, I need only refer him to his first letter. The discussion has, in my mind, taken the wrong hue, and the sooner it is dropped the better. I have no wish to argue whether \ our correspondent knows more of the subjeot than I do, as it can lead to no good, and be of little interest to anyone ; but the subject is one of great importance, and if you can find a correspondent who wonld give his views instead of quibbling contradictions, it might be of benefit to others. I urn, &0., Quality. P.S.— See the Agent-General's report on ohilled meat, and think.— Q.
