REPORTS ON THE BUTTER TRADE.

« |PQHSB ASSOCIATION.) (Received May 7, 11 a.m.) Adelaide, This Dat. The Minister of Agrioulture has reoeived a report from Mr. Young, the butter expert in London, in which he says a trial of strength between Continental and Australian butter is inevitable, but it is generally considered that tho stall-fed ouws of the former will be unable in tho long run to compete with the grass-fed animals of Australia. He strongly impresses upon exporters the necessity of sending the best and a uniform qualny of butter, properly branded, and iv regular shipments. He disagrees with tho suggestion to establish provincial distributing centres, and explains that all the large distributing firms have head centres in London, with branch agenoies in the provincial towns, all of which are within a few hours' rail of the capital. It is, therefore, practically impossible, to glut tho London market unless every town in the oouutry is in a similar condition, but it is easy to glut the provincial markets, which are thus placed at a ! disadvantage. Melbourne, This Day. The Government Analyst reports in reference to the alleged discovery of mirgarine in Victorian batter at London, that natural 1 fats exist in butter as well as in margarine, and the only question is one of proportion It would bo easy to mix suoh a small proportion of margarine in butter as that reported so dexterously as to render it impossible to prove by chemioal analysis that it was not pure butter, while some natural butters might approach the proportion of natural fats so far towards margarine that an analyst who adhered to a hard atid fast rule would deolare them adulterated. In the absence of knowledge as to tbe particular teat? applied the information contained in the cable messages proves nothing.
