TO THE EDITOR. Sir — Allow me to supplement theremarks which I havo made about butter with a few observations concerning cheese. In tho Journal of tho Royal Society of England, second series, vol. 23, part 1, No. XLV., April 1887, may bo found an artiole upon British Dairy Farmin 1 ?, by James Long, of Gravely Manor, Stovonago, Professor of Dairy Farming at tho Royal Agricultural Collogo, Cirencester. His article contains a great amount of information as to the manufactnro of cheese, and would be worth reprinting in tho colony, unless it should be hold to bo an infringement of copyright. It would certainly bo of much moro uso than tho penny-a-lining of the Langworthy easo, which, although an interesting tale, is spun out to such an inordinate longth that ono can hardly find patience to get to the end of it. The said writer chiefly aims at showing the British farmer how dairy farms aro managed on the Continent of Europe, and gives particular attention to the_ mode of manufacture of various continental cheeses. It is evident that this industry is by no moans simple, bnt reqnireß groat techical knowledge, tho rosultof longexporionce. I havo previously pointed out that Continontal cheese has been beating English cheese in its own market. From personal observation I can state that in London clubs ono nevor hears a member call for Stilton, Cheshire, or other Engli3h brands ; but he invariably asks for Gargouzola, Gruyere, or other Continental ohcoso. Now this shows that it is a question involving price Tho prime cheese sells at, perhaps, double the price of tho ordinary cheese, and if Now Zealand farmors send thoir cheeso away some 16,000 miles for sale, thoy should aim at tho highest price. Onr Agricultural Collego should tako up tho subjcot, and givo tho requisite instruction. It wns well pointed ont by a correspondent of yours last night that the butter and ohecso question is of vital importance to the small farmer.
