JEWISH MODE OF SLAUGHTERING CATTLE.

ground consisted of a cement floor; the men then passed a chain round the off hind leg of the animal; a hook was thrown over the chain, and formed a running noose ; two men at a windlass pulled the bullock up by the one leg, throwing it over violently on its back again ; the bullock was drawn out to its full length, the bullock's pole touching the ground ; the chain stripped the skin off the animal's leg ; while the bullock was in position the men got a ' tree,' a piece of wood about four or five feet in length, and upon which the 'animal was hung after it was slaughtered—and opening the mouth of the bullock, thrust it in a depth of about two feet; the two men then levered the head of the animal back by means of the ' tree ;' the defendant then cut the animal's throat; during the operation the beasfc was continually bellowing, and showing every sign of terror and pain ; -witness sjjoke to the defendant, and asked him if what had taken place was done under his direction, and he said ifc was ; the operation which ho had described lasted about 15 minutes ; there ■was an instantaneous mode of slaughtering, by pithing animal? and otherwise, and the beasfc might have been drawn up in a different manner ; the cement floor was as hard as stone ; complaints had been made to the society of the way in which animols were treated at the abattoirs, and he (witness) was instructed by bis committee to take proceedings ; the plan adopted on the occasion in question was an unnecessarily cruel way of slaughtering animals ; ifc could be done in much less time, and with much less pain. The case was dismissed, as the mode adopted had boen the custom for over thirty years, and was proved to be similar to the way they slaughter cattle for the Jews in England.
