ICED SAVOURIES
T?OR iced tomatoes, cut small rounds from the stalk end of tomatoes and scoop out the pulp. Mix this with shredded pineapple and thick mayonnaise sauce. Season and fill the tomatoes with this mixture. Place on ice for at least two hours and serve with watercress.
Cucumber cups should be served very cold. Without peeling it, cut a cucumber into two-inch lengths and oil in salted water for ten minutes. Leave in the water until cold, then dry with a qloth. Scoop out half the centre of each piece and stuff with a mixture of grated cheese, chopped egg and’mayonnaise. Place a lid of hard-boiled slice of egg on each cup.
