Napier, April 19. “There is no necessity, in my opinion, to use Canadian flour,” said a Napier baker to-day, commenting on the quality of the new season’s flour. “Last year New Zealand flour was of very poor quality, because of floods in tfie South Island, but this year it is quite satisfactory. We are obtaining a better loaf this year, and, although Canadian flour, which is regarded as the best in the world, may be necessary in some automatic bakeries, my own experience is that outside flour is not needed.” He added that provision in the wheat and flour regulations for any complaint regarding the quality of flour being made within 48 hours was merely a formal one, and that the time-limit of 48 hours was unreasonable. “The quality of flour is often not revealed until two or three weeks after purchase,” he said.
