To 51b. sugar allow 1 cup lemon juice, honey, soz. bruised ginger, 5 gallons of water. Boil the ginger for 30 minutes in 3 quarts of water. Add sugar, lemon juice and honey with the remainder of the water. Strain through a cloth, and when cold add the white of 1 egg, 1 teaspoon essence of lemon, 1 smal 1 teaspoonful essence of ginger, allow to stand for four days, then bottle and cork down securely.
