BAKED POTATO CREAM 21b. boiled potatoes, 2oz. butter, 1 onion, pepper and salt, 2 egg yolks, 2 tablespoons milk or cream, 3oz. flour. Slash potatoes thoroughly, melt butter in a saucepan, ami add diced onion. Cook onion until soft, but do not allow to brown. Mix in the potato, add flour, beaten egg yolks, and cream or milk. Season with pepper and salt and mix to a smooth mixture. Grease or butter a small square loaf tin and put mixture in. Bake in a moderately hot oven about half an hour. Have top a rich golden brown. Serve with hot or cokl roast meat.
