To-days Recipe BEEF OLIVES
lib. stewing steak, 3 large tablespoons breadcrumbs, 1 large teaspoon chopped parsley, i teaspoon salt, dash of cayenne, a little thyme, grate of nutmeg and lemon peel, loz. suet, 1 egg, stock or milk, a little fat for frying. Cut the steak into small neat squares, beat flat with a rollingpin (wet), mix dry ingredients together with beaten egg, the stock or milk, place a little on each piece of steak, roll, tie firmly with strong cotton, fry in a little hot dripping in a pan till brown, then put in a stewpan, nearly cover with stock, simmer gently for hours. Remove cotton before serving.
