Sir, —May I intrude a little on your valuable space to reply to “Dairymans letter, which appeared in your paper last week, and his suggestions re making cheese for the public taste? How manyWellington people eat cheese? Very few. If vou ask them why, they will tell you the*stuff obtainable is not suitable to their taste. If the cheese factory manager js given a free hand he can, and will, make the right stuff. As “Dairyman” points out, to prohibit the manufacture of whey butter would be a very serious blow to the cheese industry, and is, I believe, quite unnecessary. Whey butter, properly made, is perfectly wholesome and some factory workers prefer this to creamery butter. That whey butter has a flavour of its own is well known, but as it is nlade from fresh whey cream from milk that has been passed as first grade for cheese-making, it is very often more wholesome than butter made from home-separated cream. The danger in whey butter manufacture lies in the possibility of our export banter, when made in the same factory, developing a “whey” flavour after storage. Before we can really sympathise with the farmer in his difficulty we should require of him that he set his own house in order. He must agree to eliminate all waste in his own affairs. Here is a case in point: A district has three factories operating in it. A number of farmers wish to supply a factory twenty miles away. Result: Cream lorries from three factories covering the .same road, extra lorries to maintain, extra heavy traffic licenses to pay, undue wear on side roads, more wages to pay, factory efficiency interfered with, all in the attempt to satisfy one or two grumblers who would never be satisfied for any length of time with the best treatment from any factory. Factories that are so keen to increase their output at the expense of their neighbouring factories call themselves cooperative.
