A Recipe for Sherbet

. Have j’Ou ever tried to make your own sherbet? It is really quite easy to do, and the ingredients do not cost very much, either. All you need for quite a large amount of it are the following:— Quarter of a pound of fine granulated sugar, quarter of a pound of tartaric acid, two ounces of carbonate of soda (not the sort that mother has in the kitchen!), thirty drops of essence ol lemon.

First of all, turn the sugar out of the bag on to a pastry-board, then drop the lemon flavouring on to it. Roll it all outwith a rolling-pin until it is well mixed and the sugar is very fine, and place it on a clean sheet of paper in the oven for a short while to dry. . ' . When it is really dry and powdery take it out of the oven and add the tartaric acid, mixing it all well together. Your sherbet is now ready to eat or drinn—' whichever you prefer.
