To prevent fish from sticking to the bottom of the pan or breaking when boiling, wrap it in a piece of greaseproof paper and cook slotcly. Always remember to make a small hole in the top of meat pic crust so that the steam may escape; otherwise a poisonous, gas is sometimes generated tchich may have disastrous consequences. ■ A pleasant lemon flavouring can be made by placing lemon rinds and lumps of sugar together in a tightlycorked jar. Allow the sugar to absorb the aromatic oil of the rinds for a few days, then use the crushed lumps to flavour puddings, eta.
