TO-DAY'S DINNER.
ISpecially written for Tnn Dominion.l MONDAY. Boiled mutton. Caper sauce. Pol a toes. French beans. Apricot sponge pudding. APRICOT SPONGE PUDDING. Four ounces flour, four ounces butter, four ounces Domerara sugar, two eggs, two tablespoonfuls apricot jam, one tablespoonful milk, half a tcaspoontul carbonate of soda. Sift the flour and carbonate of H>dn on to a piece of paper, cream tho butter and sugar, and beat in the eggs one at a time. Add the flour, soda, apricot jam, and milk, and stir all lightly together. Put the mixture into a greased basin, cover with greased paper, and steam two hours. Turn out the pudding and serve with sweet melted butter. FOR TO-MOTtKOW.
