TO-DAY'S DINNER.
(Specially written for The Dominion.) MONDAY. Pea Soup. Mutton Cutlets. Potatoes. Stewed T.eeks. Sago Pudding. Stewed Prunes. MUTTON CUTLETS. Cutlets from tho neck of mutton, a thin batter of flour and water, slightly salted, fine brown toast raspings, lard or dripping. Trim tho cutlets and beat them flat with tho broad side of a luitchet Stake a littlo thin batter on a soup plate it only for a few cutlets with the flour and water; dip the cutlets into this, then cover them with good brown raspings, and fry quickly in lard or clarified dripping. Drain free from fat on a soft paper before the fire, and serve very hot. FOR TO-MORROW. Two pounds steak, 2 dozen oysters, suet, parsnips, treacle, brown sugar.
