Kumara surprise cake

1y 2 CU PS salad oil 2 cups sugar 3 tsp baking powder 1 tspn vanilla 1 tspn hot water 1 cup chopped pecan or walnuts 4 eggs 2y 2 cups sifted flour y 4 tspn nutmeg 1y 2 cups grated raw kumara

Frosting: 1 large can of evaporated milk 1 cup sugar 25g margarine 3 egg yolks iy 2 cups coconut 1 tsp vanilla

Method: Combine oil

and sugar and beat until smooth. Add the egg yolks and beat in well. Add the hot water and the rest of the sifted dry ingredients. Stir in kumara, nuts and vanilla and beat well to blend. Beat the egg whites until stiff, then fold gently into the mixture. Place in three one inch sponge tins which have been greased and floured. Bake at 180 deg. for 25 to 30 minutes. Frosting: Put the milk, egg yolks, and vanilla into a pot. Stir constantly over a medium heat for about 12 minutes or until thick. Cool mixture and stir in the coconut, spread on each layer of the cake and on the top.
