Toothsome taste for, patients

Mrs Margaret Hardman, chief cook at Sunnyside Hospital, reprimands Mr Jim Mclntyre who is tempted by one of the 23 Christmas cakes baked in the hospital kitchens. Mr Mclntyre is the senior food supervisor at the hospital and supervised the bak-

ing of the Christmas cakes. Mrs Hardman iced and decorated the cakes, which will be delivered to each of the villas at the hospital on Christmas Eve. It is the first time that, the hospital staff have baked cakes for Christmas. In past years cakes have been bought but the opening of

new kitchen facilities made the baking of the large number of cakes possible. The recipe was one used by the British Army and called for 17kg flour, 13kg sugar, 13kg butter, 18kg currants, 9kg sultanas, 9kg raisins, skg cherries, 3kg mixed peel, 80 oranges and lemons, 3kg almonds, 3 litres

of brandy, 500 g cinnamon, 250 g salt, 250 g mixed spice, and 240 eggs. The recipe made enough for 40 30cm square Christmas cakes, said Mr Mclntyre, but had been made into 23 different-sized cakes depending on the number of people in each villa.
