Fruit Snow
Fruit Snow may be made from any stewed fruit or mixture of fruits.
For six servings you will need:
2 cups sweetened stewed fruit and juice 2 teaspoons lemon juice 6 level tablespoons cornflour 2 egg-whites Method: The stewed fruit should be well pulped or pressed through a sieve. Heat, with lemon juice and add the cornflour mixed with a quarter cup of cold w r ater. Cook, stirring constantly until thick, and then continue to simmer for 2-3 minutes. Remove from heat and cool for a few minutes. Beat egg whites until stiff enough to stand in peaks then fold into cooled mixture. Allow to set before piling into individual dishes. Top with whipped cream.
