Strawberry Cream
Strawberry cream is a deliciously rich concoction and for those lucky enough to have this fruit in their gardens, it is not too costly. For six you need:— Jib ripe strawberries 3 egg-yolks 1J cups sugar ij cups milk 2 tablespoons gelatine 4 cup water 1 teaspoon vanilla 2 cups cream Method: After washing and stemming, press fruit
through a sieve. Beat egg yolks with 1 tablespoon of sugar until thick and creamy. Pour in the milk| gradually and stir in re-r maining sugar. Heat in top of double saucepan over boiling water until slightly thickened. Add the gelatine which has been softened in the i cup cold water and stir until dissolved. Remove from heat and add vankjla. Leave until cold and thickening then fold in the whipped cream, blending well. Pour into refrigerator tray and chill until firm.
