Apricot Whip
Apricots can produce many cold sweets and one of the easier ones is Apricot Whip. For six serving you will need:—
Boz stoned and halved apricots 2 cups cold water J lemon, sliced 4 cup sugar 1 tablespoon gelatine
Method: Stew apricots .with lemon slices until soft enough to press through a sieve. Before doing this drain off juice, reserving one cupful. Soften gelatine in a little cold water and dissolve in the hot apricot juice. Chill this until thick, then whip until it is fluffy and fold in the apricot pulp. Chill until set and serve with cream or custard.
