Grated Potato Cakes
Grated potato cakes could also be called potato fritters. They can be served with fried or grilled sausages, bacon or alone. For four you need: 1 large cupful grated raw potato 4 tablespoons flour 1 1 teaspoon baking powder Pepper and salt; Pinch of nutmeg Method: Beat egg well; sift flour with salt and baking powder and combine with the grated potato. Melt enough butter, oil or fat to cover the base of frying pan and drop the batter by tablespoons into hot fat. Fry until golden brown. Turn and brown on other side. Serve at once.
