Bacon-corn pancakes
Bacon and com pancakes can be prepared the night before. For four you will need: 1 large can cream-style sweet corn i teaspoon mixed herbs Dash of paprika 1 egg 1 teaspoon baking powder Flour Salt and pepper Bacon rashers Method: Mix the com to a thickness of medium batter with sufficient flour, add salt and pepper and paprika and herbs and beat in the egg. In the morning fry or grill bacon rashers and heat butter or oil in a second pan, sufficient to cover the base of pan. Add baking powder to batter and drop mixture from a tablespoon into hot fat. Fry over slow heat until bubbles form on top then turn and cook other side. Serve with bacon.
