APPLE SNOW
For four servings you will need: 1 cup apple sauce (sweetened) Pinch of nutmeg; salt 1 teaspoon vanilla essence. 2 egg whites 1 cup castor sugar Green food colouring Whipped cream. Method: Press apple through a sieve and add nutmeg, salt and vanilla. Beat egg whites until stiff, fold in sugar and beat again, then fold in to apple mixture; colour lightly and pile into serving dish or dishes. Top with sweetened and flavoured whipped cream.
