MARSHMALLOW FLUMMERY
With a peppermint flavour, this delicious flummery will serve four to six persons. You will need: 2 tablespoons gelatine 2 tablespoons flour 2 cups water Two-thirds cup sugar | cup each of lemon and orange juice Peppermint flavouring Green colouring 10 marshmallows Method: Soak gelatine in half of the water. Blend flour to a paste with the balance of the water, and combine both mixtures in a saucepan; add sugar. Bring to the boil, stirring constantly, and simmer for 2-3 minutes. Add fruit juices, flavouring and colouring after removing from heat. Allow to cool and when beginning to thicken beat until mixture holds its shape. Pile into individual dishes. Chop marshmallows roughly and place in container over boiling water until melted, spoon over flummery and decorate with chopped cherries, angelica and whipped cream.
