Attractive Book On Meat Cookery
So popular was a recipe book written by an Englishwoman, Mrs Bee Nilson, and devoted especially to meat cookery that it is now in its fifth impression.
Sponsored by Oxo, Ltd, in collaboration with the National (British) Federation of Meat Traders Associations, “The Book of Meat Cookery” (including poultry and game) has sold more than 450,000 copies. Systematically laid out, with colour illustrations, the book is well indexed and contains 96 pages packed with information. Not only is there a delightful array of recipes, but there is a list of utensils cooks are. likely to need in meat cookery and the cooking of accompaniments, and an A.B.C. of meat cooking con-
taining valuable information on cooking terms. Unless you are an experienced cook, the author advises spending a little more, money on the basic equipment than on too many gadgets. Most housewives con-1 sider a set of knives the best investment as these are the implements most used in meat cookery. Each recipe in the book has suggested accompaniments, and the chapters provide instruction on how to carve, how to buy, and how to recognise good-quality meat.
There are 32 beef recipes. 17 for veal, 27 for lamb, 20 for pork, and several for offal (liver, tripe, kidneys, hearts). A special chapter is devoted to poultry and game, and another to soups, sauces, and stuffings. A schedule of different types of wine and their approximate costs will not be of much use to New Zealanders; the price list is British.
