Food For Thought STAR FRITTERS

Star Fritters are unusual biscuits fried in deep, hot oil. They may be used as a dessert, served with custard or raspbery sauce or eaten cold as a cookie with a cup of tea. You will need: 9oz plain flour 2 level teaspoons baking powder 1 level teaspoon salt 2 medium eggs 3oz castor sugar 2 level teaspoons mixed spice 3oz butter 2oz chopped walnuts 2oz lightly fried almonds (optional) Method: Sift flour with baking powder, mixed spice and
salt. Beat butter until softened and gradually beat in sugar. Beat until light and fluffy, then whisk in eggs, one at a time, adding a tablespoon of the flour mixture with each egg. Stir in the nuts. Work to a soft dough with the remaining flour. Knead lightly, then wrap and chill for at least on hour. Roll out to half-inch thickness on a floured board. Cut into stars with a starshaped biscuit and deep fry in hot oil until golden brown (about one minute), then drain on absorbent paper. Sprinkle with castor or icing sugar mixed with a small pinch of ground cinnamon. Serve warm for a high tea or cold, if preferred. Yield, about three dozen.
