Lemon Buns will provide something a little different for morning tea, and also for school lunches. This recipe calls for ground rice which is obtainable in some city grocery shops. An alternative is to increase the flour by one ounce and add one ounce of cornflour.

You Will Need: 4 oz self raising flour Pinch of salt 2 oz ground rice 3 oz sugar 3 oz butter 1 egg The juice and rind of i lemon 1-2 dessertspoons milk A little icing sugar Method.— Sift flour and salt Into a bowl, stir in the rice and sugar, rub in the butter with your finger tips. Add beaten egg, lemon rind and juice and enough milk to make a soft dropping consistency, blend well. Lastly butter some patty tins, two-thirds fill the tins with the mixture; dredge lightly with sugar,

bake in an oven at 400 degrees for 20 to 25 minutes. It should make a dozen buns.
