Food For Thought SAVOURY PANCAKES

Savoury beef pancakes make a tasty light tea or a television meal on a Monday to use up any left-over meat from the week-end joint. Any cold roast meat will do, such as lamb, hogget or pork. You will need: Boz cooked chopped meat 1 medium-size onion finely chopped Salt and pepper Some parsley Knob of butter. The pancakes:

4oz flour Pinch salt and pepper 2 eggs Little over } pint milk. Method: Sift the flour, salt and pepper. Beat the eggs and milk and add to the flour to make a pancake batter. Add the meat and onion. Heat a little fat in a frying pan and put in a spoonful. Allow to spread. Brown on one side then turn and brown the other. Spread with butter, sprinkle with parsley and roll .up.
