A thick fruit pancake, Canterbury Fruit Pancake Bake, really is delicious, and is

just as nice hot or cold. Preheat your oven to 350 deg. F. The recipe will take 15 minutes to prepare and 40 minutes to bake. You Will Need: soz flour and pinch of salt 4oz sugar (depending on the sweetness of the fruit) 2 eggs 1 cup of milk 1 dessertspoon of butter 11b of fruit (stoned); either plums, apricots or whatever you like Method: You will need a good-sized fireproof dish, about 10 inches. Sift flour and salt into basin with half the sugar and then beat in the eggs with a wooden spoon Add the milk a little at a time to form a smooth batter. Butter the dish and stone the fruit Pour in a little of the batter spreading it with a spoon about {in thick. Put dish on top of stove over an asbestos mat and a low heat for a few minutes. Just to set the mixture. Remove from heat and strew over the stoned fruit thickly. Sprinkle with the remainder of the sugar and pour over the remaining batter and spread evenly. Cook at once in an oven 350 deg F. towards the bottom for about 40 minutes. Serve sprinkled with, sugar. >
