This Is the time of the year when beetroot and tomatoes are most plentiful. Both make excellent home pre-serves-easy to process and always extremely useful to have in the store cupboard. Here are simple but effective ways to bottle them; Use small, uniform beetroot. Wash them carefully, leaving the roots and stems long. Boil for 15 minutes, then plunge them into cold water and remove the skins. Pack them into clean jars Add two teaspoons of salt and sugar mixture to each quart jar U desired. Fill the jars to within half an inch of the top with boiling water. Seal the jars and process them in a pressure cooker at IWb pressure (25 minutes for pint jars, 40 minutes for quart jars), or in a boiling waterbath for two hours. Wash them, then scald in boiling water only long enough to remove the peel (about half a minute). Plunge them into eold water if necessary. Then core and quarter them and pack into clean jars. Add no water, but press the tomatoes down so that they make their own juice. Add a teaspoon of salt to each quart jar if desired. Seal with vacuum lids and process the jars in a pressure cooker at Mb pressure for 10 minutes, or in a boiling water bath for 35 minutes.
