Sausage Halo

When there is a ptatie la prospect, a "gaggle of young” in for a meu. or even for a family meal, a Sausage Halo is an inspiration. It is an aristocratic-looking relation of sausage rolls, but It is twice as quick and easy to do, and twice as exciting and interesting to look at when finished. Quantities given here make a large halo, baked in your largest meat dish and quite sufficient to satisfy six hungry boys. It may be cut into about 18 big pieces. 21b sausagemeet.

Method: Roll a lib package of puff pastry out until it is a long oblong, about IHn long and half as wide. Spread with the sausagemeat to make a good thick coverage, keeping in about one inch from the far edge. Moisten along the edge and roll in from the long side to make a neat roll. Roll and pull out gently, moisten the ends and join the pastry together to form a circle. Place on a baking tray or in a large meat dish. With a sharp knife, cut down through the pastry and meet, taking the cuts about two-thirds of the way across to the centre, and making about 18 evenlyspaced cute round. Turn each cut piece to lie fiat overlapping the piece next to it. Bake in a moderately hot oven about 45 minutes or until browned. Pour off excess fait in the pen at once then allow the ring to become cold in the tin, or serve hot if desired.

A man who had been unhappy in marriage married immediately after his wife died. Dr. Johnson said it was the triumph of hope over experience.
