Brussels Sprouts
We can buy good brussels sprouts at present, and they are worth remembering for a vegetable which may be made the base for several dishes. To cook them plain, merely remove any discoloured outer leaves, cut a small sliver off the stalk end, and make a slit like a cross for half an inch into the stalks. Drop into boiling salted water and ’ boil rapidly (uncovered) until just tender. Do not over cook. Drain well, toss with a little butter and serve at once.
Any left may be sauted in a little butter or dripping, or may oe tossed in any coating batter ana dropped into hot oil or drinome until crisply browned. For a variation, serve them in a quick Hollondaise sauce, or turn into a brussels sprouts and cheese flan.
