"FLASH" PASTEURISATION

Sir, —At the recent meeting of the Hospital Board, when milk tenders were being considered, the Rev. J. K. Archer (according to your report) said that one dairy farmer was prepared to “flash” pasteurise his milk. “Flash pasteurisation” and “high temperature short-time pasteurisation” are forms of continuous flow pasteurisation which comply neither with the temperature nor time requirements within the legal definition contained in the Milk (Special Designations) Order in England, and therefore cannot be licensed there. It seems possible that some pasteurising machine has found its way to this country, and may be sold, the purchaser not being aware of the risk he takes.
