BREAD
TO TBf< editor or THE PHBSB- - is still the staff of life, though becoming unsafe to lean on. It has been said that a man will die more quickly on white bread and water than on water only. Hence the great value of Dr. Hilgendorf s recent broadcast, showing how a first ferment or sponge can be made with flour containing the wheat germ. The fermentation would then go on normally, and either a white loaf or wholemeal loaf could be made. The latter would contain also the bran. A return student from Egypt after the Great War tells me he thought the bread made by the peasants by stone crushing had risen fairly well, and the general question occurs whether or not some old nation still uses a yeast that is superior to ours in being able to ferment wholemeal containing the germ The second question also arises as to the period when the germ began to be removed in English muling. and whether before such date the English bread was healthy but stodgy or heavy.
