Stew apples with 2-ozs. sugar, butter and water. When tender take off fire and stir in quickly yolks of eggs and essence. Line a plate with short pastry, put in apple mixture and bake till pastry is cooked. Whisk whites to a stiff froth, fold in castor sugar, pile on top of tart and brown in a cool oven.
