The Now Zealand Dairy Produce Board has received the following caSlo from its London office, dated February 4th, 1927: BUTTER New Zealand, new season, unchanged, 172s to 1745; stored practically cleared, nominally 166s to 168s. There is an improving demand. Australian, finest Baited, 166s to 170s, unsalted J 70s to 1745; Argentine finest, 156s to 1625; Dutch unsalted, 198s to 200s; Danish. 188s. Retail price, Danish advanced to Is lOd; New Zealand unaltered, Is Bd. There is improved Continental demand, especially from Germany, where home production is decreaiin?. The demand is mostly for undergrades in the meantime

CHEESE. New Zealand Board prices are unchanged (Finest white 945, coloured 965, first grade 93a to 945). Tho market in firmer. Australian finest coloured, 93s to 935; English, finest farmers, 106s to 112s. There is Bteady demand. Retail prices aro unchanged. Holding butter prices in January enabled the quick clearance of all cold stored at reasonable prices. Cleiranco is now completed. This is most desirable for many reasons, including the Board's advertising programme. The process of clearing stored has affected the sales of Fernleaf brand. Canadian cheese is now practically cleared, leasing New Zealand the entiro market. The steady market makes buyers disinclined to purchase beyond a weekly supply, thus extending the poriod of clearance of the Board's accumulation in January. The results, however, are much healthier market conditions. We can expect larger sales hereafter, but probably will require to carry a proportion of the accumulation a little longer. For the fortnight ended February 4th, tho following quantities of dairy produce under control of the Board have been sold:—

Butter—Creamery, 42,860 boxes (average price realised 173s 4d per cwt); whey, 1253 boxes (155s 6d). Cheese: 29,433 crates (93s 8d).

For the purpose of assessing values it may be taken that the sales given above represent cheese graded to the third week in October, and butter to approximately October 27th, 1926.

Returns received from dairy companies indicate that the great majority have given up using preservative. We would take this opportunity of drawing the attention of all factories to tho new regulations in the United Kingdom, which prohibit the use of bono acid or preservative in butter as from January, 1928. As there are occasions on which buyers hold New Zealand butter for lengthy periods, it would be advisable to discontinue the use of preservative from now onwards, so as to avoid the possibility of trouble later on.
