SWEET PICKLED MELONS.
/ Sp.lect .cantaloupes or muskmelons, npt 'quite ripe. Cut into oblong pieces, and re-. lnove'Stua i-ind and ebf fc part near the seedß. Prepare the spiced pickle in the following: proportions : To every Blbs of melon^ take ;oHe.pin.t of vinegar aad 3 lbs of sugar. Mix half ,'af teaspobnful each of ground mace, and clqreSj onq; teaspoonful each of ginger, allspiCe and cinuamon. Tie this mixture into a small piece of cheesecloth, and boil ifc with fhe vinegar. Cook the melon carefully in the i hotsyrup until tender, then fikim out into a large bowl. Boil the liquor down, and pour it over the. fruit; this for three 1 or four times, and the last heat all together, then put into jars and seal.
