EASTER RACING AT ELLERSLIE

Here is a pudding which is equally useful as a second course, or as a dish by itself for a light meal with fruit or salad to come after.

Into some hot milk in a saucepan sprinkle by degrees enough tine semolina to make the mixture of pudding thickness when boiled. Flavour with salt and pepper, boil gently to thicken for five minutes, stirring all the time, then add grated cheese to taste. Three tablespoon fills will not be too much. When well mixed, pour into a greased pie-dish, scatter a little more cheese on the top, and put in the oven or under the grill for a couple of minutes. Serve very hot. If any is left over it can be shaped into fritters next day and served up fried in egg and breadcrumbs. Let it be remembered that cereals, unlike meat, arc none the worse for recooking. Alany children, and grown-ups too, who dislike semolina cooked with sugar, will relish it when salted and mixed with cheese. Ground rice and other fine cereals can he treated in the same way. and can be made very attractive by the addition of tomato puree.
