LONDON'S HEAT FARE.
London is enthusiastically adjusting food habits to changing temperatures. This revolution in diet started just after the war. The change was slow, but in recent years it has gathered momentum. The public no longer wishes the same food, whatever the temperature. During a heat wave the most |>opular drinke are orangeade and lemonade, followed closely by iced drinks. Iced coffee is a favourite. Salads are asked for more than any other dish, in a heat wave, and a salmon mayonnaise, and egg mayonnaise are always in great demand. The public are elso coming more and more to regard ice cream as a food. Consumption has increased by more than 60 per cent since 1935. The new summer food habits have also affected the menus of hotels. Gallons of fresh orange juice are consumed at breakfast every day. Grapefruit is growing in popularity. Only 10 or 12 years ago grapefruit was a rarity. Vast quantities of milk are also being drunk at milk-bars throughout London.
