APRICOT MERINGUES.
To make this delicious sweet, rub some tstewed or tinned apricots through a. sieve. Have some good short -crust pastry cases made and till them with the apricot puree. (hop finely one ounce of ewect almonds and sprinkle these on top of the apricot puree ill each case. Make a meringue mi.vttire, using two whites of eggs and four ounces of castor sugar. Pile the meringue neatly over each case. Dredge thickly with castor sugar and place in a cool oven to dry off.
