VIENNA'S MEAT FOOD.
PRE-WAR .AND POST-WAR. LESS BEEF, MORE EGGS. VIEXNA. According to oflicinl figures \ ienna is eating considerably less than it did before the war. There are two reasons for this-; the public tijiste has changed and people are eating lighter food than did the pre-war generation. And everybody is very much poorer. In I{> 13 214.000 head of cattle were brought into the Vienna market, and of these 175,000 remained in Vienna. In 1 <J3"> 94,000 head of cattle were brought to Vienna, and after the re-export to Lower Austria, only 81,000 remained in this city. Moreover, in 1013, 80 per cent of the cattle were already fattened; to-day only 55 per cent are fattened. The consumption of pigs haa not changed during these years; only the "lands of origin have altered. Before the war almost the whole supply came from Galicia and Hungary; to-day Poland supplies only a sixth and Hungary even less, while one-third of the pig supply if, home produced. In 1013 30,000 calves were slaughtered at the Vienna abattoir; in 1935 only 10,000.
There is comparatively little change in the consumption of vegetables. A great increase, however, is noticeable in the consumption of egg*. In 1914 40.0 million egg.* were consumed in Vienna; in J935 this increased to 02.0 million*. Of these 55 million came from Austrian producers.
