Figures compiled by the Dominion Bureau of Statistics are said by tliem to■ show that Canadians eat more eggs per capita than any other peoj>le in the world. The annual consumption _is about 250 eggs, or more than two-thirds of an e<rg each day for every individual in the Dominion.
Importations of eggs are small, and practically the entire supply comes from the 25,000,000 Canadian hens which produced last year 223,250,000 eggs. In the past seven years the "queen of the farmyard" has mised her annual egg production from 95 per year to 112, thus keeping in pace with a steadily increasing demand.
Officials say Canada is the only country in the world with a system of egg grading controlled and supervised by a Government department of agriculture from producer to consumer, and to the high and uniform quality assured by elaborate safeguards they attribute the popularity of eggs in this country. Canada was the first country to introduce egg grading in any form. That was in 1918, when it was desired to cultivate the British market for the Canadian surplus. The system was made to apply to eggs consumed in the Dominion, as well as those exported, on the basis of quality, size and cleanliness. and as the uncertainty about the purchase of eggs was removed consumption advanced from 10 dozen per capita per year to the present figures.'
